As part of your healthy lifestyle, we are sure that you want to incorporate some delicious and healthy salads into your meal planning. Continue reading to learn some healthy salads to try this summer, and stop by Greenspot Salad Company at one of our two San Diego locations to have a healthy salad made for you!

Fresh fruit is almost a requirement for any summer salad, at least in our opinion. You’ll notice that a number of the salads we’ve included feature fresh fruit that ripens during the summer season. Don’t miss out on the added burst of flavors that fresh fruit can bring to your healthy salads this summer!

1. Quinoa Fruit Salad with Honey Lime Dressing

This salad features quinoa, which will require a small amount of cooking time. Aside from the time it takes to prepare the quinoa and the dressing, you’ll be surprised at how easy this recipe is to throw together, and we hope you’ll make it part of your salad rotation.

Quinoa Ingredients:

  • 1 cup quinoa
  • 2 cups water
  • Pinch of salt

Honey-Lime Dressing Ingredients:

  • Juice of 1 large lime
  • 3 tbsp. honey
  • 2 tbsp. finely chopped fresh mint


  • 1½ cups blueberries
  • 1½ cups sliced strawberries
  • 1½ cups chopped mango


Prepare quinoa according to the directions on the package. Once quinoa is cooked, set it aside and allow it to cool to room temperature.

Prepare the dressing by whisking the lime juice, honey, and chopped mint until well combined. Set the dressing aside and prepare the fruit by slicing the strawberries and chopping the mango.

Combine the quinoa and fruit in a large bowl, pour dressing across the ingredients and gently stir to mix all of the salad ingredients with the dressing. Garnish with additional mint if desired, and serve at room temperature or chilled.

*Note — you can substitute the fruit in this recipe for any of your favorite summer fruits.

2. Grilled Chicken Mango Salad with Mango-Cilantro Dressing

This salad combines two of our summer favorites — grilled chicken and fresh veggies! Not only that, but the dressing also works as a marinade to double the flavor impact. This one might just become your new favorite summer salad.

Marinate your chicken in a half cup of mango-cilantro dressing for about 15 minutes. You can either make your own dressing or purchase one from the store. If you’d like to make your own, then here is one version you can try.

Dressing/Marinade Ingredients:

  • 1 large mango, peeled, pitted, and chopped
  • ½ cup fresh cilantro
  • 1 green onion
  • 1 garlic clove
  • 1 tbsp. chopped jalapeno
  • ¼ tsp. Cumin
  • ¼ cup lime juice
  • ½ cup olive oil
  • Salt and pepper to taste


Add the mango, cilantro, onion, garlic, jalapeno, cumin, lime juice, and salt and pepper to food processor and puree until smooth. Gradually add oil in small amounts, and puree after each addition. Your dressing should be thick, creamy, and light lime in color.

Salad Directions:

After your chicken is done marinating, add olive oil to a grill pan, and cook the chicken for 15 minutes before turning it halfway. Allow it to rest for 10 minutes before slicing it. In a large bowl, add the lettuce, cucumbers, bell peppers, avocado, cilantro, and grilled chicken. Pour the dressing on top and toss to combine all ingredients. Enjoy!

3. Grilled Basil Chicken and Peach Salad with White Balsamic-Honey Vinaigrette

This summer salad may take a bit longer to prepare, but we hope that you’ll agree it’s worth the wait. In fact, it has so many delicious ingredients, that it may just top your list of recipes for dinners this summer. Our time-saving tip on this one is to prepare the vinaigrette ahead of time so that it’s on hand and ready to go when you are.

Grilled Basil Chicken

  • 1 lb. boneless, skinless, chicken breasts
  • 3 tbsp. olive oil
  • ⅓ cup chopped basil
  • 2 minced garlic cloves
  • 1 tbsp. lemon juice
  • Salt and pepper (optional)

White Balsamic-Honey Vinaigrette

  • ⅓ cup olive oil
  • 3 tbsp. White balsamic vinegar
  • 1 tbsp. honey
  • 1 tsp. Dijon mustard
  • Salt and pepper (optional)


  • 10 oz. spring greens mix
  • 1 lb. peaches (about 3 small peaches)
  • 2 ears corn, husked and shelled
  • ½ cup toasted and chopped pecans
  • ½ small red onion, sliced
  • 4 oz. crumbled goat cheese

Whisk olive oil, basil, garlic, lemon juice, salt, and pepper in a small mixing bowl. Press the basil against the sides and bottom of the bowl using a spoon to help extract extra flavor. Use a meat mallet to pound chicken to an even level across each breast. Pour the basil mixture over the chicken and use a spoon to ensure that all of the chicken is evenly coated. Place chicken in a resealable bag and allow it to marinate between two to five hours.

Preheat your grill to 425 degrees, grill chicken until cooked through, and check that the internal temperature is 165 degrees. Cut into strips when fully cooked and allow it to cool for about 10 minutes.

Whisk together all ingredients for the vinaigrette and store in the refrigerator until you are ready to use.

Toss together all of the items for your salad, including the grilled chicken. Sprinkle goat cheese over the top and finish with a drizzle of the vinaigrette.

4. Adult Fruit Salad

One of the best salads to enjoy during summer is an all-fruit salad. There are so many juicy and delicious fruits that ripen in the warmest season of the year, that it would be a shame not to enjoy as many of them as possible. While there are a number of variations on the fruit salad, we have one that we think you’ll enjoy a little bit more. This recipe adds a few tablespoons of Grand Marnier, which helps to bring out some of the brighter notes of the fruit as well as add a little hint of sweet orange.

You can combine any fruit that you want, of course, but here are our suggestions:

  • Sliced plums
  • Sliced nectarines
  • Sliced kiwi
  • Fresh blueberries
  • Fresh blackberries
  • Fresh mint, torn
  • 2 tbsp. sugar
  • 2 tbsp. Grand Marnier

After combining all ingredients, place your adult fruit salad in the refrigerator for about 30 minutes so that everything will stay cool while taking on the flavors of the other ingredients. Serve alone or with shortbread cookies.
